Özet
Changes of oil contents and fatty acids composition during the development of kernels of Yalova-1 and Yalova-4 walnut varieties were investigated. Samples were taken from trees by 20 days intervals in this period and analysed. Oil contents of cultivars increased as parallel to the kernel development. These increases were statistically significant (P< 0.05). Palmitic (16: 0) and stearic (18: 0) acid contents h ave decreased as kernels develop. The decreases of palmitic acid contents were statistically significant, but stearic (P< 0.05). Oleic (18: 1) acid increased regularly and reached maximum level at the harvest date. Linoleic (18: 2) and linolenic (18: 3) acid c ontents decreased during the fruit development period. The changes of these acid contents were statistically significant except linoleic acid of Yalova-4 (P< 0.05). Résumé L'évolution des teneurs en huile et de sa composition en acides gras a été suivie durant le développement des cerneaux chez les variétés de noyer Yalova-1 et Yalova-2. Des échantillons de fruits étaient collectés tous les 20 jours pendant cette période et analysés. La teneur en huile des cultivars augmente significativement tout au long du développement du cerneau (P< 0.05). Les teneurs en acides palmitique (16: 0) et stéarique (18: 0) diminuent durant le développement du cerneau. La diminution de teneur en acide palmitique est statistiquement significative, ce qui n'est pas le cas pour celle en acide stearique (P< 0.05). La teneur en acide oléique (18: 1) augmente régulièrement et atteint son niveau maximum au moment de récolte.
